Rice Pudding with Raspberry Jam

So yesterday I started my FODMAP diet fully. One of my favourite things to eat is rice pudding, so I decided to start my first day on a high and create a low FODMAP version. It was delicious!!

1 litre almond milk
200g of arborio rice
100g of caster sugar
1 vanilla pod
Orange rind
and a sprinkle of cinnamon

Method

I put all of these ingredients in the slow cooker and cooked on low for 6 hours. Warning, when this is cooking it smells amazing! So if you’re anything like me, you’ll find it very difficult not to pop a spoon in the slow cooker now and again for a taste.

I thought to finish this dish off it would be nice to make a little fruit accompaniment, so I made a very simple raspberry jam.

I simply mashed up a handful of raspberries with some chai seeds and added in a splash of fresh lime just and a dash of maple syrup and left it in the fridge until I served up my rice pudding. Yum!!
