Monkfish and parmaham risotto (low FODMAP)

I loved risotto but most risotto dishes have a garlic and onion base so I tried to create a low FODMAP version. I’m pretty pleased with how it turned out, so much so I paired it with a nice glass of red wine…..yum!

Ingredients

  • 1 tbsp garlic infused oil
  • 1 cup arborio rice
  • 2 cups of bone broth
  • some herbs for flavour (paprika, oregano, basil)
  • a handful of spinach
  • 1 monkfish tail
  • 2 slices of parmaham
  • 1 handful of parmesan
  • salt and pepper to season

Method

In a pot heat up the garlic infused oil with some paprika, fry off the rice for a couple of minutes before adding in the bone broth along with the oregano and basil. Allow the rice to cook through whilst stirring regularly. When the rice is almost cooked through add in the spinach. Wrap the monkfish in the parmaham and fry for approx 5 minutes each side. Before serving add in the parmasan to the rice and season with some salt and pepper. Chop up the cooked monkfish and add to the top and that’s you. Pour a nice glass of red and enjoy 🙂
