Roasted red pepper and feta dip

I was really craving something savoury to snack on and I wanted to make something that wasn’t too difficult to make, as a result I came up with this dip! It’s super yummy and now I can’t walk past it without dipping my finger in for a taste!! I recommend you give it a shot.

Ingredients

  • 1 red pepper
  • 200g feta cheese (I used organic)
  • 1tsp ground cumin
  • 1tsp paprika
  • 1 good squeeze of fresh lemon
  • 1/2 tbsp of olive oil

Method

Chop up the red pepper and place on a baking tray. Drizzle some of the olive oil on top along with the cumin and paprika. Roast in the oven for 15 minutes until the pepper is soft and delicious. Remove from the oven and place all the ingredients in a food processor and blend until nice and smooth. Serve with whatever you fancy and enjoy!
