I have completely abandoned my blog recently – mainly due to the fact I have changed jobs and I’ve been so busy concentrating on that. But I’m back and I have an exciting low FODMAP recipe to share with you all!
My new job involves me being on my feet all day and burning lots of calories, therefore I need to take lots of snacks with me to keep me going. I’ve found it difficult to find low FODMAP snacks or even come up with ideas, but I gave this a go and they turned out pretty good. They’re a little bit on the sweet side so feel free to adapt the recipe to your taste.
60g Quinoa pops
1 ripe banana
80g (roughly) peanut butter or nut butter of your choice
3 tbsp coconut oil
3 tbsp maple syrup
1 tsp cinnamon
1 heaped tbsp cacao
Place the peanut butter, 2 tbsp maple and 1 tbsp coconut oil in a pan and place on a low heat until it mixes together and forms a gooey mixture. Pop this into a mixer with the banana and cinnamon, blend together for 1-2 minutes.
Pour the mixture onto the quinoa pops and mix together until the mix has covered all off the quinoa pops. Transfer into a dish and pressing down firmly. Place the dish in the freezer for an hour or so.
Whilst this is setting you can make the chocolate layer. I simply threw the remaining ingredient into a pan on a low heat and melted together, the poured over the top of the mixture. Place all of this back in the freezer to set before cutting into squares. These will need to be stored in the fridge.
