Gluten free and low FODMAP Pancakes

Flourless Pancakes

So it probably comes as no surprise but I LOVE pancakes for breakfast, so when I came up with this delicious low fodmap pancake recipe I was delighted. It’s really easy to make, contains no flour and also went down a treat at home. The best bit about the recipe is everything can be thrown into a food processor before cooking in the pan!

Ingredients (Serves 2)

1 ripe banana

2 eggs

3/4 cup milk of choice (I usually use almond milk)

2 cups gluten free oats 

1 tsp vanilla bean paste

1 tsp cinnamon

2 tsp chia seeds

2 tbsp maple syrup 

Coconut oil for frying

Method

Seeing as I’m not so much of a morning person the method for making these pancakes works well for me,  throw all your ingredients into a food processor and blitz until smooth. Heat some coconut oil in a hot pan and ladel on the pancake mix, once you can start to see bubbles forming on the pancake then you can flip onto the other side to cook through. Repeat with the rest of the pancake mixture until you have used it all up and enjoy your pancakes! I usually serve with some berry compote or a chocolate sauce…yum!
