I’m not going to lie, everytime I’ve made these they have lasted less than 24 hours in our household – they are such a hit! Like most recipes on my blog, these are super easy to make. You don’t even require a food processor, I simply mix the ingredients together with a wooden spoon and they turn out fab. Now I’m saying these are low in FODMAPs,and the ingredients are, but please note that coconut sugar has not yet been reviewed by Monash University.
1 tsp vanilla bean paste
1 tsp cinnamon
175g peanut butter
120g coconut sugar
1 tsp baking powder
25g dark chocolate (you can add more but I don’t like to add too much to mine)
Preheat your oven to 180. In a mixing bowl, mix up all the ingredients apart from the chocolate. Give it a good mix until the mixture looks smooth. Break up the chocolate into small pieces and mix through the brownie mixture. Line a baking tray with paper or with coconut oil, pour the mix in and spread out evenly then bake for 20-25 mins.
