If you’re a fan of Matcha, you will love this recipe. If you’re not a fan, you’ll still love this recipe. This is my first taste and attempt of Matcha Coconut Ice Cream!
I’ve never been the biggest fan of Matcha, unless it’s in the form of a latte or ice cream. So I tried to create my own low FODMAP and vegan version, as was delighted with how it turned out! I previously tried my hand at some vegan banana ice-cream here. But this time I wanted to try something a little different. As always, it’s a super simple recipe, requiring very few ingredients. It definitely doesn’t compromise on flavour though.
I think this ice cream would make the perfect after dinner dessert as it’s light on the pallet. It’s not too filling and is also quite refreshing. As Matcha is well known for it’s health properties, I wanted to create a dessert that included it, but the flavour wasn’t overpowering. This is when I came up with Matcha Coconut Ice Cream.
I used Vivid Matcha sachets in this recipe, and ensured the rest of the ingredients were low in FODMAPs. Matcha tea hasn’t been reviewed by the Monash University to determine whether or not it is low in FODMAPs or not. However, if you’re not in the elimination phase of the diet, I would always recommend assessing your tolerances anyway. I believe it’s so important to include as much in your diet as you possibly can. Especially when it tastes this good!
