Carrot Cake Baked Oats

Baked oats is a great for when you have a little more time on your hands in the morning, or often I stick them in the oven and get ready whilst waiting on them baking. I like to mix it up for breakfast and created this recipe which tastes delicious and also includes a little bit of veg in it too….what more can you ask for?!


1/4 cup gluten free oats

1/4 cup quinoa flakes

1 egg

half a grated carrot

1 tsp nutmeg

1 tsp cinnamon

1 tsp ground ginger

1/2 cup milk of your choice ( I have been reintroducing dairy into my diet and have been tolerating milk well therefore used it in this recipe, however I have used almond milk previously and it worked out well)

dash of maple syrup

a sprinkle of chia seeds


Preheat your oven to 200. Whisk up the egg with the oats and quinoa flakes, add in the grated carrot, nutmeg, cinnamon, ground ginger, maple and chai seeds. Mix through. Add in the milk, enough so that it can soak into the oats whilst baking. Place in the oven for approx 15 mins and enjoy! It’s almost like eating a cake for breakfast…yum.
