I scream, you scream, we all scream for nice-cream!

With the weather getting hotter this definitely calls for some nice-cream – my new favourite thing! 

I’ve seen lots of posts for nice-cream (banana ice-cream, vegan ice-cream) around, so I decided to give it a go myself and get creative. The base is frozen bananas, which when frozen gives a lovely texture and flavour. I never used to like bananas at all and now I include them in so much of my food. Somehow the banana flavour gets lost when frozen but they add a lovely sweetness to the nice-cream.

Now, through trial and error I have a few tips before you get started. Make sure your bananas are nice and ripe. Don’t freeze the bananas with the skin on, you’ll have a nightmare when you take them out the freezer. Chop or break up the banana before you put it in the freezer, it’ll make it much easier to blend. And finally a good food processor or blender will help, or sit your banana out for a bit before blending to allow it to soften.

I’ve created four different flavours for you to try out, each of them serve 2/3 in order that they’re FODMAP friendly. Let me know how you get on and tag me in your creations so I can see how fabulous they are!

Mixed berry

  • 3 frozen bananas
  • 1 handful of blueberries
  • 1 handful of raspberries
  • 1/4 avocado
  • 2 tsp coconut sugar
  • 1 tsp AdunaWorld baobab

Blitz up the frozen banana until it’s come together and softened a little, add in the avocado until it’s mixed in a little and then add in the rest of the ingredients, until it’s all blended into a lovely colour and serve up straight away.


Peanut butter and chocolate

  • 3 frozen bananas
  • 3 heaped tsps smooth peanut butter
  • 1 tsp raw cacao
  • 1/4 avocado
  • Dash nut milk

Follow the same method as above and add in the peanut butter and cacao last, this is my favourite nice-cream, probably because I am a chocolate addict! I added a little sauce to my nice-cream which is made up of equal parts cacao, maple and coconut oil.

Mint choc chip

This one surprised me, it’s got veggies in it and you would never know!

  • 3 frozen bananas
  • 1/2 avocado
  • Handful spinach
  • Couple of drops of mint extract or fresh mint would do
  • Cacao nibs for mixing in

Again, follow the same method as above and leave the cacao nibs for mixing in with a wooden spoon – my dad loved this one, I was delighted about that!

 Pina Colada

A perfect adaptation of the yummy cocktail!

  • 3 frozen bananas
  • One 2cm slice of fresh pineapple
  • 1 tbsp creamed coconut
  • 2 tsp coconut sugar
  • A squeeze of fresh lime if you fancy

Follow the same method as about, this one comes out quite a bit smoother than the others, feel free to add in some avocado if you want a creamier texture but I prefer this one without. You can also add some desiccated coconut for texture too at the end if you like. This is a lovely refreshing one for summer.
