Spanish-style chicken one pot bake

This is such an easy recipe which doesn’t involve a lot of work in the kitchen, it contains lots of veggies and is also so full of flavour, creating a yummy low FODMAP meal. You can throw all the ingredients in a dish and bake in the oven and that’s dinner made for you.


  • 1 pack chicken thighs
  • 2 large tomatos (chopped)
  • 1 handful of olives
  • 2 handfuls of spinach
  • a good glug of white wine
  • 1 tsp paprika
  • 1 tbsp of garlic infused oil
  • salt and pepper to season


I simply put everything in an oven dish and cooked for approx 35 minutes at 190 degrees.
